Fennel and Orange Salad 4 Servings/ Serving Size: 2/3 cup vegetables, 1 cup salad greens, 1 1/4 Tbsp dressing
Ingredients
- 2 medium fennel bulbs
- 1 red onion, peeled, halved, and sliced thin
- 2 oranges, peeled, halved, and sliced thin
- 4 cups salad greens
Dressing
- 2 1/2 Tbsp white wine vinegar
- 1 1/2 Tbsp olive oil
- 1 Tbsp orange juice
- 1 tsp honey
Salt and pepper to taste
Directions
- Remove the fennel stems and fronds and discard. Cut the bulb end of the fennel into thin strips.
- Combine the fennel strips, red onion, and oranges in a salad bowl.
- Combine the dressing ingredients. Add the dressing to the fennel and toss well. Serve at room temperature over salad greens.
