Fennel and Orange Salad
4 Servings/ Serving Size: 2/3 cup vegetables,
1 cup salad greens, 1 1/4 Tbsp dressing

Ingredients

  • 2 medium fennel bulbs
  • 1 red onion, peeled, halved, and sliced thin
  • 2 oranges, peeled, halved, and sliced thin
  • 4 cups salad greens

Dressing

  • 2 1/2 Tbsp white wine vinegar
  • 1 1/2 Tbsp olive oil
  • 1 Tbsp orange juice
  • 1 tsp honey
    Salt and pepper to taste

Directions

  1. Remove the fennel stems and fronds and discard. Cut the bulb end of the fennel into thin strips.
  2. Combine the fennel strips, red onion, and oranges in a salad bowl.
  3. Combine the dressing ingredients. Add the dressing to the fennel and toss well. Serve at room temperature over salad greens.
