Pineapple Mousse


  • 20-ounce can pineapple, packed in juice, drained
  • 2 tablespoons fructose
  • 1 cup evaporated skim milk, chilled
  • 1 envelope unflavored gelatin
  • 1 tablespoon lemon


  1. Puree the pineapple in a blender or food processor
  2. Add the fructose; stir
  3. Set aside
  4. In a mixing bowl, whip the evaporated milk until thick and creamy
  5. In the top of a double boiler, sprinkle the gelatin over the lemon juice
  6. Let stand 3 to 5 minutes
  7. Stir over hot water until dissolved
  8. Stir the gelatin into the whipped milk
  9. Fold the pineapple mixture into the milk
  10. Spoon into dessert dishes
  11. Chill until set
