Pineapple Mousse Ingredients - 20-ounce can pineapple, packed in juice, drained
- 2 tablespoons fructose
- 1 cup evaporated skim milk, chilled
- 1 envelope unflavored gelatin
- 1 tablespoon lemon
Directions - Puree the pineapple in a blender or food processor
- Add the fructose; stir
- Set aside
- In a mixing bowl, whip the evaporated milk until thick and creamy
- In the top of a double boiler, sprinkle the gelatin over the lemon juice
- Let stand 3 to 5 minutes
- Stir over hot water until dissolved
- Stir the gelatin into the whipped milk
- Fold the pineapple mixture into the milk
- Spoon into dessert dishes
- Chill until set
