Mediterranean-Style Chicken Salad
4 Servings / Serving Size: 1 cup

Ingredients

  • 8 oz precooked chicken strips (such as Perdue)
  • 1 15-oz can water, packed artichoke hearts, drained and halved
  • 7-oz jar roasted red peppers, sliced
  • 1 cup halved cherry tomatoes
  • 2 Tbsp black olives
  • Juice of 1 lemon
  • 2 Tbsp red wine vinegar
  • 1 1/2 Tbsp olive oil
  • 1 Tbsp minced chives

Directions

    Combine all ingredients, cover, and refrigerate for a half hour before serving.
