Mediterranean-Style Chicken Salad 4 Servings / Serving Size: 1 cup
Ingredients
- 8 oz precooked chicken strips (such as Perdue)
- 1 15-oz can water, packed artichoke hearts, drained and halved
- 7-oz jar roasted red peppers, sliced
- 1 cup halved cherry tomatoes
- 2 Tbsp black olives
- Juice of 1 lemon
- 2 Tbsp red wine vinegar
- 1 1/2 Tbsp olive oil
- 1 Tbsp minced chives
Directions
Combine all ingredients, cover, and refrigerate for a half hour before serving.
