Healthy Cheesecake Ingredients - ¼ cup graham cracker crumbs
- 2 cups yogurt cheese
- 2 teaspoons vanilla extract
- ½ cup egg substitute
- 2 tablespoons cornstarch
- 6 packets concentrated aceslufame-K
Topping - ½ cup nonfat sour cream
- 2 teaspoons sugar
- 2 teaspoons concentrated aceslufame-K
- 1 teaspoon vanilla extract
Directions - Spray a 9 inch (23-cm springform pan with non-stick cooking spray)
- Sprinkle it evenly with gram-cracker crumbs
- Set aside
- Use electric mixer to combine the next five ingredients
- Beat until creamy
- Pour the mixture onto the crumbs
- Bake in a preheated 325°F (160°C) oven for 35 minutes
- Remove from the oven and let cool
- Refrigerate
- Combine the topping ingredients and pour the mixture over the baked, chilled cheesecake
- Return it to the oven for 10 minutes
- Chill
- Run a knife around the edge of the pan to loosen the cheesecake
