Healthy Cheesecake


  • ¼ cup graham cracker crumbs
  • 2 cups yogurt cheese
  • 2 teaspoons vanilla extract
  • ½ cup egg substitute
  • 2 tablespoons cornstarch
  • 6 packets concentrated aceslufame-K


  • ½ cup nonfat sour cream
  • 2 teaspoons sugar
  • 2 teaspoons concentrated aceslufame-K
  • 1 teaspoon vanilla extract


  1. Spray a 9 inch (23-cm springform pan with non-stick cooking spray)
  2. Sprinkle it evenly with gram-cracker crumbs
  3. Set aside
  4. Use electric mixer to combine the next five ingredients
  5. Beat until creamy
  6. Pour the mixture onto the crumbs
  7. Bake in a preheated 325°F (160°C) oven for 35 minutes
  8. Remove from the oven and let cool
  9. Refrigerate
  10. Combine the topping ingredients and pour the mixture over the baked, chilled cheesecake
  11. Return it to the oven for 10 minutes
  12. Chill
  13. Run a knife around the edge of the pan to loosen the cheesecake
