French Meatball Soup


  • 2 tablespoons rice (uncooked)
  • 2 ounces ground beef round
  • 1 tablespoon egg (raw, beaten)
  • 1 teaspoon onion (grated)
  • Dash each garlic, parsley, nutmeg
  • 2 tablespoons dry red wine
  • 1 ½ cups beef broth
  • Salt and pepper to taste


  1. Add rice to cup (250 mL) salted water
  2. Boil 5 minutes, drain well
  3. Blend rice, ground beef round, egg, onion, garlic, parsley and nutmeg
  4. Form small meatballs
  5. Add wine to broth, bring to broil
  6. Drop meatballs into hot broth, one at a time
  7. Bring to boil again, reduce heat
  8. Simmer 20 minutes
  9. Add salt and pepper
