French Meatball Soup Ingredients - 2 tablespoons rice (uncooked)
- 2 ounces ground beef round
- 1 tablespoon egg (raw, beaten)
- 1 teaspoon onion (grated)
- Dash each garlic, parsley, nutmeg
- 2 tablespoons dry red wine
- 1 ½ cups beef broth
- Salt and pepper to taste
Directions - Add rice to cup (250 mL) salted water
- Boil 5 minutes, drain well
- Blend rice, ground beef round, egg, onion, garlic, parsley and nutmeg
- Form small meatballs
- Add wine to broth, bring to broil
- Drop meatballs into hot broth, one at a time
- Bring to boil again, reduce heat
- Simmer 20 minutes
- Add salt and pepper
