Washington’s Cherry Pie


  • 9-inch unbaked pie shell
  • 2 cups unsweetened cherries
  • ¼ cup soft margarine
  • 1 tablespoon flour
  • ½ cup sugar replacement
  • 2 egg yolks
  • ¼ cup evaporated milk
  • ½ vanilla extract
  • 2 egg whites
  • 2 teaspoons granulated sugar replacement


  1. Drain cherries; pour into unbaked pie shell
  2. Cream margarine, flour, and sugar replacement
  3. Add egg yolks and beat until smooth
  4. Add evaporated milk and vanilla extract
  5. Pour over cherries
  6. Bake at 450°F (230°C) for 10 minutes
  7. Reduce heat
  8. Bake at 350°F (175°C) for 30 minutes
  9. Whip egg whites until soft peaks form
  10. Add granulated sugar; whip until thick and stiff
  11. Top pie filing with meringue, carefully sealing edges
  12. Bake at 350°F (175°C) for 12 to 15 minutes, or until delicately brown
