Eggs sold in New York State must display their grade or quality on packaging and in advertisements. The Department of Agriculture and Markets oversee grade and quality standards of eggs for sale in New York State.

Eggs may be Grade AA, A, or B. Size classes include Jumbo, Extra Large, Large, Medium, Small, and Pewee. Grades and classes have specific requirements.
