Episode 3 - Mexican Tostadas

Guacamole
2 each Lime, juiced
4 each Avocado, peeled, crushed
¼ each Red onion, small diced
2 tablespoon Cilantro, fresh, chopped
1 each Jalapeño pepper, small diced
2 tablespoon Tomatillo Sauce*
Salt, to your taste

In a non-reactive or glass bowl, squeeze the juice from two limes and crush avocado with the back of a wooden spoon.
Add red onion, cilantro, Jalapeño, and Tomatillo sauce and season with salt to your taste.


Pico de Gallo
12 each Plum tomatoes, small diced
2 tablespoon Cilantro, fresh, chopped
2 each Lime, juiced
1 each Jalapeño pepper, seeds removed, small diced
Salt

In a non-reactive or glass bowl, combine above ingredients and season with salt to your taste.


Tostada de Chorizo
10 each Tostada Tortilla (can be replace with a fried corn tortilla)
Refried beans*
4 each Mexican chorizos, small diced, sauté
1 each Iceberg lettuce, shredded
1 cup Tomatillo Sauce
1 each 16-oz jar Crema fresca Mexicana (can be replace with sour cream)
½ Lb Cotija Cheese, grated

In a tray, assemble tostadas. Apply a thin layer of refried beans on top, add sautéed chorizo, add shredded lettuce, add Tomatillo sauce, and top with crema fresca. Sprinkle Cotija cheese on top.


*Tomatillo Sauce
4 each Tomatillo, quartered
1 each Jalapeño pepper, cut in half
¼ each Red onion, medium
6 sprig Cilantro, fresh
2 each Lime, juiced
Salt

In a blender jar, add above ingredients and blend until the consistency is smooth.
Season with salt to your taste.


*Refried Beans:
1 lb Red beans, dry  
Water
2 tablespoon Vegetable oil
½ each White onion, peeled

Check beans for foreign particles, like small rocks or stones.
In a pot, cover beans with cold water and soak for two hours or overnight. Discard water after soaking.
Cover soaked beans with fresh water and bring water to a boil. Cook until beans are soft and tender.
In a sauté pan, add oil and onion and cook for about five minutes. Remove onion from sauté pan.
Add beans to oil and cook for about 5 minutes. Using a potato masher, crush beans until they're a smooth paste.

Fresh Watermelon Juice
Tequila
Cointreau, or orange liqueur
Lime Juice, fresh
Ice cubes

Add the above ingredients in a shaker and shake well.
Serve in a highball glass.
