Main Dish Tuscan Bean Salad
4 Servings / Serving Size: 1 1/4 cup

Ingredients

  • 1 small red onion, minced
  • 2 celery stalks, minced
  • 2 medium carrots, diced
  • 3 garlic cloves, minced
  • 1 Tbsp minced fresh basil
  • 1 Tbsp minced fresh mint
  • 2 tsp minced fresh parsley
  • 3 Tbsp fresh lemon juice
  • 1 1/2 Tbsp olive oil
  • 2 15-oz cans cannellini beans or other white beans, drained

Directions

    Combine the ingredients in order, cover, and refrigerate for a half hour before serving. Serve the salad at room temperature.
