Main Dish Tuscan Bean Salad 4 Servings / Serving Size: 1 1/4 cup
Ingredients
- 1 small red onion, minced
- 2 celery stalks, minced
- 2 medium carrots, diced
- 3 garlic cloves, minced
- 1 Tbsp minced fresh basil
- 1 Tbsp minced fresh mint
- 2 tsp minced fresh parsley
- 3 Tbsp fresh lemon juice
- 1 1/2 Tbsp olive oil
- 2 15-oz cans cannellini beans or other white beans, drained
Directions
Combine the ingredients in order, cover, and refrigerate for a half hour before serving. Serve the salad at room temperature.
