Garlicky Shrimp and Broccoli
4 Servings / Serving Size: 4 oz.

Ingredients

  • 2 tsp olive oil
  • 4 garlic cloves, thinly sliced
  • 1/2 small onion, minced
  • 1 lb. peeled and deveined large shrimp (order ahead and have it deveined for you)
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 2 cups broccoli florets
  • 1 1/3 cup low-fat, reduced-sodium chicken broth
  • 2 Tbsp freshly grated Parmesan cheese
    Salt and pepper to taste

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the garlic and onion and sauté for 1 minute.
  2. Add the shrimp and sauté for 2 minutes. Add the basil, oregano, and broccoli. Stir to mix. Add the broth, cover, and cook for 2-3 minutes until the broccoli is bright green but tender.
  3. Season with salt and pepper. Sprinkle Parmesan cheese over each serving.
