Garlicky Shrimp and Broccoli 4 Servings / Serving Size: 4 oz.
Ingredients
- 2 tsp olive oil
- 4 garlic cloves, thinly sliced
- 1/2 small onion, minced
- 1 lb. peeled and deveined large shrimp (order ahead and have it deveined for you)
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 2 cups broccoli florets
- 1 1/3 cup low-fat, reduced-sodium chicken broth
- 2 Tbsp freshly grated Parmesan cheese
Salt and pepper to taste
Directions
- Heat the oil in a large skillet over medium-high heat. Add the garlic and onion and sauté for 1 minute.
- Add the shrimp and sauté for 2 minutes. Add the basil, oregano, and broccoli. Stir to mix. Add the broth, cover, and cook for 2-3 minutes until the broccoli is bright green but tender.
- Season with salt and pepper. Sprinkle Parmesan cheese over each serving.
