Spinach Salad with Raspberry Vinaigrette 6 Servings / Serving Size: 1 1/2 Cups
Make a spinach salad special with added walnuts, mushrooms, red onion, and easy raspberry vinaigrette.
Ingredients
- l/4 cup raspberry vinegar
- 3 tablespoons sugar-free raspberry preserves
- 2 tablespoons canota oil
- 8 cups fresh spinach, washed and patted dry, stemmed and torn into pieces
- l/2 cup sliced mushrooms
- l/4 cup chopped red onion
- 3 tablespoons coarsely chopped walnuts, toasted
Directions
- In a blender or food processor, combine the vinegar and raspberry preserves. Add the oil in a thin stream and blend well.
- In a large bowl, carefully toss the spinach, mushrooms, onion, and walnuts with the dressing and serve immediately.
