Spinach Salad with Raspberry Vinaigrette
6 Servings / Serving Size: 1 1/2 Cups

Make a spinach salad special with added walnuts, mushrooms, red onion, and easy raspberry vinaigrette.

Ingredients

  • l/4 cup raspberry vinegar
  • 3 tablespoons sugar-free raspberry preserves
  • 2 tablespoons canota oil
  • 8 cups fresh spinach, washed and patted dry, stemmed and torn into pieces
  • l/2 cup sliced mushrooms
  • l/4 cup chopped red onion
  • 3 tablespoons coarsely chopped walnuts, toasted

Directions

  1. In a blender or food processor, combine the vinegar and raspberry preserves. Add the oil in a thin stream and blend well.
  2. In a large bowl, carefully toss the spinach, mushrooms, onion, and walnuts with the dressing and serve immediately.
