Linguine with Clams 4 Servings / Serving Size: 1 cup
Ingredients
- 8 oz uncooked linguine
- 1 1/2 Tbsp olive oil
- 1 small shallot, minced
- 3 garlic cloves, minced
- 2 lb small clams in their shells, scrubbed
- 1/2 cup minced parsley
Directions
- In a large pot of water, cook the linguine for about 9 minutes or until al dente (still slightly firm) and then drain.
- Meanwhile, heat the oil in a large skillet over medium heat. Add the shallot and garlic and sauté for 2 minutes. Add the clams, cover and cook for 4 minutes until the clams open their shells; discard any unopened clams. Add in the parsley.
- Add the linguine to the clams and cook for 1 minute. Transfer to a bowl and serve immediately.
