Fettuccine with Prosciutto and Asparagus
4 Servings I Serving Size: 1 cup

Ingredients

  • 1 lb fresh asparagus
  • 8 oz fettuccine
  • 1 Tbsp olive oil
  • 1 small onion, minced
  • 2 tsp minced garlic
  • 3 oz chopped lean prosciutto
  • 2 tsp balsamic vinegar
  • 1/8 tsp crushed red pepper
  • 2 Tbsp freshly grated Parmesan cheese
    Salt and pepper to taste

Directions

  1. Break off the woody ends of the asparagus. Diagonally slice each spear into thirds.
  2. Add the pasta to a large pot of boiling water and cook for 5-6 minutes. Add the asparagus and cook for 3-4 minutes more until the pasta
  3. In the same pot, heat the oil over medium heat. Add the onion and garlic and sauté for 2 minutes. Add the prosciutto and sauté for 2 minutes more. Add the balsamic vinegar and cook 1 more minute. Add the fettuccine and asparagus. Toss with salt, pepper, and crushed red pepper. Top with Parmesan cheese.
