Fettuccine with Prosciutto and Asparagus 4 Servings I Serving Size: 1 cup
Ingredients
- 1 lb fresh asparagus
- 8 oz fettuccine
- 1 Tbsp olive oil
- 1 small onion, minced
- 2 tsp minced garlic
- 3 oz chopped lean prosciutto
- 2 tsp balsamic vinegar
- 1/8 tsp crushed red pepper
- 2 Tbsp freshly grated Parmesan cheese
Salt and pepper to taste
Directions
- Break off the woody ends of the asparagus. Diagonally slice each spear into thirds.
- Add the pasta to a large pot of boiling water and cook for 5-6 minutes. Add the asparagus and cook for 3-4 minutes more until the pasta
- In the same pot, heat the oil over medium heat. Add the onion and garlic and sauté for 2 minutes. Add the prosciutto and sauté for 2 minutes more. Add the balsamic vinegar and cook 1 more minute. Add the fettuccine and asparagus. Toss with salt, pepper, and crushed red pepper. Top with Parmesan cheese.
