Cream of Chicken and Almond Soup

Ingredients

  • 1 cup chicken broth
  • 1 whole clove
  • 1 spring parsley
  • ½ bay leaf
  • 1 tablespoon celery (sliced)
  • 1 tablespoon carrot (diced)
  • 1 teaspoon onion (diced)
  • 2 teaspoons stale bread crumbs
  • ½ ounce chicken breast (cubed)
  • 1 teaspoon blanched almonds (crushed)
  • ¼ cup skim milk
  • 1 teaspoon flour
  • Salt and pepper to taste

Directions

  1. Heat chicken broth, clove, parsley, bay leaf and bring to a boil; remove from heat
  2. Allow to rest 10 minutes; strain
  3. Add celery, carrot, onion, bread crumbs, chicken, and almonds to seasoned chicken broth; simmer 20 minutes
  4. Blend in skim milk and flour
  5. Remove soup from heat; add milk mixture
  6. Return to heat
  7. Simmer (do not boil) 3 to 5 minutes
  8. Add salt and pepper

1 vegetable
¼ milk
