Chicken Giblet Stew

Ingredients

  • 3 ounces chicken giblets
  • 2 cups water
  • ¼ teaspoon thyme
  • ¼ bay leaf
  • 1/8 teaspoon parsley (crushed)
  • Salt and paper to taste
  • 3 tablespoons potatoes (diced)
  • 2 tablespoons onion (diced)
  • 2 tablespoons celery (diced)
  • 2 tablespoons green beans (sliced)
  • 2 tablespoons carrots (diced)
  • 2 tablespoons peas
  • 1 teaspoon flour
  • ¼ cup water

Directions

  1. Remove center muscle of giblets
  2. Place the 2 cups water, giblets and seasonings in saucepan; cover
  3. Heat to boil; reduce heat and simmer until giblets are tender, about 1 hour
  4. Add extra water to make about 2 cups (500mL) liquid
  5. Remove bay leaf
  6. Add vegetables; reheat and cook until vegetables are tender
  7. Blend flour with the 1/4 cup water
  8. Blend into stew
  9. Cook to desired thickness
