Bean Stew

Ingredients

  • 1 tablespoon pinto beans
  • 1 tablespoon northern beans
  • 1 tablespoon lentils
  • 1 cup beef broth
  • 1 tablespoon carrot (sliced)
  • 1 tablespoon hominy
  • 1 teaspoon onion (diced)
  • ½ teaspoon green chilies (chopped)
  • 1 teaspoon white vinegar
  • Dash each: garlic powder, oregano, salt, pepper

Directions

  1. Boil beans and lentils in beef broth for 10 minutes, covered
  2. Allow to stand 1 to 2 hours, or overnight
  3. Place softened beans and remaining ingredients in baking dish
  4. Bake at 350°F (175°C) for 45 minutes to 1 hour, or until ingredients are tender
