Balsamic Glazed Chicken
4 Servings / Serving Size: 4oz.

Ingredients

  • 4 4-oz boneless, skinless chicken breasts
  • 2 tsp dried thyme leaves
  • 1 Tbsp olive oil, divided
  • 2 small shallots, minced
  • 3 Tbsp balsamic vinegar
  • 1/2 cup no-sugar-added raspberry jam
    Salt and pepper to taste

Directions

  1. Sprinkle the chicken with salt, pepper, and thyme leaves. Heat half the oil in a large nonstick skillet over medium, high heat. Add the chicken and sauté on each side for 4-6 minutes. Remove the chicken from the skillet.
  2. Add the remaining oil and the shallots and sauté for 1 minute. Combine the vinegar and jam, add to the skillet, and bring to a boil. Lower the heat and simmer for 2 minutes. Put the chicken and any accumulated juices back in the skillet and simmer for 2 minutes.
